A warming concoction that is right on-trend using a sugar syrup made from Cava, to reduce waste behind the bar, as its base. This cocktail is the perfect blend for Whisky, Oloroso Sherry and a sweet, intense Cava reduction that warms the soul.


  • 50ml Jameson Irish whiskey
  • 15ml Cava Rose syrup*
  • 15ml Oloroso Sherry or similar Dry Sherry
  • 3 dashes of Angostura bitters
  • 1 dash of cardamom bitters (optional)

(*Take 300ml of flat rose cava and boil down adding in caster sugar 150g or enough to raise viscosity.)
