Spanish Kiss

A variation on a Bellini theme, style especially to suit Cava drinkers and fizz fanatics alike, using peaches two ways to create a foam-laden sparkling cocktail for those who like something a bit sweeter.

Ingredients:

  • Cava Brut Reserva
  • Apricots two ways
  • Eggs
  • Lime
  • Sugar

Method: Homemade apricot purree mixed with cava. Pour into the glass and add Cava foam float.

Glassware: Coupe

Garnish: dried apricots
