The Cava Academy – a three-day training course for on-trade professionals – first took place in London on three consecutive Mondays in July, 2018.
Initially designed exclusively for UK sommeliers, of all levels, this in-depth educational course will be expanded to professionals throughout the wine industry who wish to study Cava at a high level.
Only 40 candidates were selected to join this programme, all of whom successfully complete the course and were awarded Official Cava Sommelier accreditation in person from the 2018 president of the Consejo Regulador DO Cava, D. Pedro Bonet.
The Cava Academy programme:
Day One Monday 9 July
Course tutors: Lenka Sedlackova MW & Fernando Mora MW
Course times: 10am – 2.30pm
Theory: History, geology and viticulture
Tasting: Base wines, indigenous varieties, young wines
Day Two Monday 16 July
Course tutors: Richard Hemming MW & Sarah Jane Evans MW
Course times: 10.30am – 2.30pm
Theory: Viniculture, ageing and Paraje Calificado
Tasting: Reserva, Gran Reserva & Cava de Paraje Calificado
Day Three Monday 23 July
Course tutor: Matthieu Longuere MS & Silvia Grimaldo
Course times: 10.30am – 3.00pm
Theory: Gastronomy, the perfect serve and commerce
Tasting: Food pairing with Cava, examination and presentation ceremony.
Location: This course took place in central London at 67 Pall Mall – an exclusive private members club, with excellent facilities, that is at the pinnacle of wine education, service and enjoyment.
Course fees and attendance: All selected candidates are sponsored by DO Cava to complete the course, at no charge. Those who are awarded a place on the Cava Academy course will be expected to attend all three days in order to pass the course.
Please note: this course was conducted in English. All students needed good command of written and spoken English.
